To ensure all meals delivered to the guest rooms are freshly cooked and fried, our kitchen is located on the guest room floor. We make an effort so that everything is offered fresh, and that what should be served warm remains warm and what should be served cold remains cold.

~ Breakfast to enjoy freshness and consideration
for the mind and the body ~
For breakfast we offer dishes such as fresh seafood
local to Sagami, freshly cooked rice in clay pot, dipped tofu,
small seasonal dishes, stew, and a bowl of soup with a variety of ingredients.
Complete with fresh seasonal vegetables and homemade yogurt,
we hope that our guests enjoy the freshness and consideration for the mind and the body.

Japanese rice wine
We have carefully selected Japanese rice wine from all parts of Japan with focus on local Kanagawa breweries. These are wines made by serious-minded brewers that carefully prepare high quality rice wine, and are known for their thorough screening of rice, with some growing their own rice.
We have avoided wines with strong features, taste, or fragrance that might cancel out the presence of dashi and the ingredient. Our selection focuses mainly on pure and dry ginjo and dai-ginjo wines with little unpleasant aftertaste. -
Wine
Recently, domestic wineries have been adjusting to the changing climate and evolving dramatically in terms of techniques in production control.
Gen’s wine selection focuses on domestic wines that complement Kaiseki cuisine, with emphasis on white wines made in stainless-steel barrels that has clean and pure aftertaste and with no flavor from the barrel.
As for the variety of the grapes, our lineup focuses on Chardonnay, Koshu, and Sauvignon Blanc with clean aftertaste. -
Sparkling wine
Mariage between sparkling wine with minerality and delicateness and Kaiseki cuisine will open you up to a who new world different from that of Japanese rice wine.
Selection of sparkling wine at Gen focuses on blanc de blancs wines that are made using a single variety of grape, with aftertaste that features both solid minerality and delicateness. We also select high quality vintage bottles.
Compatibility between blanc de blancs made 100% with Chardonnay grapes and Kaiseki cuisine is exquisite.
We recommend sparkling wine not only as an aperitif but also to drink together with the meal, to enjoy its marriage with Kaiseki cuisine. -
Other drinks
We have also selected other drinks that complement Kaiseki cuisine, including alcoholic beverages such as beer, shochu, plum wine, and domestic whiskey. In addition, we offer a wide variety of non-alcoholic beverages and soft drinks including the “ROYAL BLUE TEA,” which is the world’s first sophisticated tea that can be enjoyed like wine, 100% fruit juices, and locally produced ciders.
If you have such requests, please write down the specifics at the time of check-in or let us know before-hand. Guests with severe allergy, please also go through the following information.

・Although we use separate cooking utensils for standard food preparation and those used to prepare meals for guests with severe allergy, because they are all cooked in the same kitchen, there is possibility that the non-allergen meals may be contaminated with a small amount of allergic substances.
